The real Andouillette de Troyes
The jewel in the crown of Troyes gastronomy, and the heritage of a Trojan butchery tradition, the genuine andouillette de Troyes is a must-try.
The recipe? Andouillette is made from pork intestines and stomachs cut into strips, then seasoned and plunged into a court-bouillon for 5 hours.
Enjoy it grilled or with the famous Chaource sauce!
Traditional Chaource
The charming village of Chaource, in the Armance region, gives its name to this emblematic cheese.
With its inimitable taste, tender crust and soft paste, Chaource is a ladle-molded cow’s milk cheese that has been classified as an Appellation d’Origine Contrôlée (AOC) for 50 years.
Champagne truffles
Set off in search of that jewel of gastronomy: the truffle. Scattered and well-hidden in the forests of Champagne, they are also known as “autumn truffles” and reveal aromas of hazelnut and undergrowth.
Les Riceys rosé
The fact that it is produced on only 30 hectares and only in years with plenty of sunshine makes it a rarity.
Rosé des Riceys is a still wine, an essential part of Aube gastronomy and unlike any other beverage.
Troyes sloe
Since 1840, the recipe has remained unchanged: crushed kernels macerated in alcohol, sugar syrup and a blend of plants. This liqueur, which won a gold medal at the 1900 Universal Exhibition in Paris, is produced at the Cellier Saint Pierre in Troyes.
Pays d’Othe cider
More than 300 varieties of apples have been grown in the Aube region since the 16th century, enabling the production of cider.
